Plantain Vegan Lasagna

I have to admit that this recipe isn't truly mine! One of my best friends who originates from Venezuela taught me this before she went on her travels a couple of years ago, and I fell in love with it. 

I have adapted the recipe so that us vegans don't have to miss out on this incredible dish. I hope you enjoy it as much as I do.

Ingrediants 

  • Coconut oil / Rapeseed Oil
  • Couple of cloves of garlic
  • 1 Medium Onion  
  • 4 Ripe Plantain 
  • 1 pack of Vegan Mince / Black beans / Lentils (or any other type of bean of your choice to make the 'meat' filling 
  • Garam Masala 
  • Grounded Coriander 
  • Curry Powder 
  • Everyday Seasoning (or any other spices that you would prefer)
  • Black Pepper
  • 1 Can of Chopped Tomatoes/ Red Sauce (optional) 
  • Vegan Cheese (optional)

Method

  1. Preheat oven to 250 degrees and place oven dish on the middle shelf 
  2. Preheat a frying pan and melt coconut oil
  3. Peel and slice onions and garlic 
  4. Shallow fry onions and garlic 
  5. Peel and slice the plantain
  6. Lightly fry the plantain until golden 
  7. Season the vegan mince with all the seasoning mentioned in the ingredients section (I don't use measurements, just throw it in as you see fit and give it a good stir)
  8. If using lentils follow the suggestion on the packet to cook them (as some of them need soaking) once soaked season with all the seasoning as mentioned earlier 
  9. If using beans follow the suggestion on the packet to cook them (as some of them need soaking) once soaked season with all the seasoning as mentioned earlier 
  10. Mix the fried onion and garlic with the mince / beans/ lentils 
  11. Remove oven dish from the oven and begin to layer the dish
  12. Firstly pour a layer of either mince/ beans/ lentils
  13. Spread a layer of fried plantain on top of either the mince/ beans/ lentils
  14. Spread a layer of chopped tomatoes / red sauce on top of the fried plantain (optional)
  15. Sprinkle vegan cheese over the chopped tomatoes/ red sauce (optional)
  16. Continue to layer oven dish like this until all ingredients are in the dish
  17. Cover the dish with foil and put in the oven for approx. 20 minutes (or until golden brown)
