Vegan Rasta Pasta is the ultimate comfort food. Simple, affordable and bursting with flavour.

Bringing a snippet of the Caribbean to your home. With the fiery kick of the jerk seasoning and the sweetness of the coconut milk your taste buds will be jumping for joy with this quick and easy recipe.

Ingredients

Olive Oil

3 Spring Onion

3 Garlic cloves 

½ Red Sweet Pepper

½ Yellow Bell Pepper

½ Green Bell Pepper

2 tbsp Flour

1 can Coconut Milk

1 tbsp Jerk Seasoning

1 tbsp All Purpose Seasoning

2-3 tsp Thyme

1 cup Vegetable Stock

½ Lime (squeezed juice) 

2 tsp Desiccated Coconut

270ml Double Vegan Cream

2 tbsp Nutritional Yeast

250g Pasta

1 tsp Chilli Flakes

1 tsp Black Pepper

Method
1. Cook the pasta, according to package directions, drain and set aside.
2. Over low heat, sauté garlic, spring onions and peppers in olive oil. Add flour and allow to brown.
3. Add vegetable stock and stir into a smooth sauce. Stir in coconut milk, nutritional yeast, lime juice, jerk seasoning, all purpose seasoning and thyme.
4. Sprinkle in desiccated coconut and stir in vegan cream, until desired taste has been reached.
5. Add cooked pasta then gently toss before serving.
6. Top with chilli flakes, black pepper and a wedge of lime
